I know for me I tend to get bored quick with that I’m eating
so I pick on things I shouldn’t or I run out and grab something
for lunch rather than risk eating something from home that
might be better for me!
Know what I mean?
So I came up with this YUMMY & QUICK lunch idea
I wanted to share with you.
As my clients know, a high protein lunch packed with
flavor is one of the easiest ways to start
curbing the cravings!
And my kids LOVE it too…see below for pics of 3 bowls
for 3 hungry kids!
Jenn’s Yummy *Salmon Bean Salad

*can replace salmon with protein of choice!
Ingredients:
1 cup of cooked black beans rinsed (I used organic canned beans)
1 organic red pepper (peppers are loaded with pesticides so make it organic)
1/2 red onion diced (optional)
1 lime
1 can wild alaskan salmon (whole foods and trader joes sell it!)
Handful of cilantro rinsed + chopped finely (can buy it fresh at any grocery store)
Handful of organic baby greens (I buy mixed greens already washed!)
Olive Oil to taste
Sea salt to taste
Directions:
Rinse beans quickly in a strainer and put in a large bowl
with onion, cilantro and 1 diced organic pepper
of choice (sometimes I use two 1/2 yellow and 1/2 red pepper
to give it more color!)
Add can of salmon (if you don’t like salmon you can subsitute a
turkey burger or other protein of choice. I’ve even put in cold cuts
like Applegate Turkey breast!
Squeeze 1 lime in the bowl with olive oil and sea salt to taste.
Toss everything together with large spoon.
Tastes best if you let it chill for 1/2 hour in the frig but usually I’ll just eat
it on the spot!
Place over a bed of greens and ENJOY!
